Matcha & White Chocolate Chunk Cookies Cooling on a Cooling Rack

Ingredients

2 cups all purpose flour
1 1/2 tablespoon of matcha - chef blend would be best*
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup packed brown sugar
1/2 cup granulated sugar
3/4 cup unsalted butter, melted
1 tablespoon vanilla extract
1 egg
1 egg yolk
3/4 cups chopped white chocolate or white chocolate chips*

Directions:

  • Preheat oven to 325 degrees F. Grease baking sheets or line with parchment paper.

  • Sift flour, matcha, baking soda and salt together in a bowl. Beat brown sugar, butter and white sugar together in a large bowl until blended — we did it by hand but a mixer would work too. beat in vanilla extract, egg and egg yolk until light and creamy.

  • Mix flour mixture into creamed butter until dough is just blended; fold in white chocolate using a wooden spoon.

  • Drop cookie dough, 1 heaping tablespoon per cookie, onto the prepared cookie sheet 2 to 3 inches apart.

  • Bake 10 - 12 minutes, or until edges are lightly browned. Cool cookies on baking sheet for 3 minutes then transfer to rack to cool completely.*

orig. recipe called for 1 tablespoon of matcha powder, but we couldn’t really taste the matcha in the cookie, so we increased to 1 1/2. may need 2, but want to try 1 1/2 first.

orig. recipe called for 1 1/2 cups of white chocolate. we felt this was excessive to the point that we removed chips from the dough by hand for the second batch.

orig. recipe called for 8-10. we were goey at 8, 9, 10. 12 was good for us. we cooked in a gas oven.
